blueberry kombucha BBQ sauce recipe

Blueberry Crumble Kombucha BBQ Sauce

Firewalker’s kombucha brings layered fruit and tea notes (blueberries, apple, elderberry, rosehip, and floral hints) that reduce into a tangy, aromatic base. A touch of cinnamon/allspice nods to “crumble” while smoked paprika and mustard keep it decisively BBQ.

The fizz from the kombucha keeps it bright and adds balance and acidity to the sauce. Perfect for ribs, grilled chicken, shrimp on the barbie… whatever you decide to throw on the grill.

Ingredients

Makes 2 cups of BBQ Sauce

  • 1 cup (240 mL) Firewalker Blueberry Crumble Kombucha

  • 1 cup (240 g) ketchup

  • ½ cup (75 g) fresh or frozen blueberries

  • 2 Tbsp (30 mL) apple cider vinegar

  • 3 Tbsp (40 g) brown sugar or maple syrup

  • 1 Tbsp (15 mL) Worcestershire (or a vegan Worcestershire alternative)

  • 1 Tbsp (15 g) Dijon mustard

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼–½ tsp kosher salt, to taste

  • ¼ tsp black pepper

  • Optional “crumble” notes: ¼ tsp cinnamon + pinch allspice

  • Optional heat: ⅛–¼ tsp cayenne or 1 tsp minced chipotle in adobo

Directions

  1. Reduce: In a saucepan, combine kombucha and blueberries. Simmer over medium heat until reduced by about half and berries are soft (8–10 min).

  2. Sauce: Stir in ketchup, vinegar, sweetener, Worcestershire, mustard, spices, salt, and pepper. Simmer 6–8 min, stirring, until glossy and slightly thick.

  3. Blend & finish: Blitz with an immersion blender (or cool slightly and blend) until smooth. Taste; adjust salt, vinegar, or heat. For a thicker glaze, simmer 2–3 minutes more.

How to Use

  • Glaze: Brush on ribs, chicken, salmon, tofu, or jackfruit in the last 5–10 minutes of grilling or roasting so sugars caramelize without burning.

  • Dip: Serve warm with tenders, wedges, or roasted veg.

  • Sandwich spread: Whisk 2–3 Tbsp with 1 Tbsp mayo or vegan mayo for a smoky-berry sandwich sauce.

Make It Yours

  • Bright citrus pop: Add 1 tsp lemon zest at the end.

  • Extra smoky: 2–3 drops liquid smoke.

  • Chunky style: Skip blending; lightly mash the berries for texture.

  • Lower sugar: Use tomato sauce in place of ketchup and sweeten to taste.

Storage

Cool completely. Refrigerate in a clean jar for up to 10–14 days, or freeze for up to 3 months. Always use a clean spoon to avoid contamination.
