Ingredients

  • 2 tbsp fresh lime or lemon juice

  • 1 tbsp or apple cider vinegar

  • 1–2 tsp honey or agave

  • 1 tsp Dijon mustard

  • ¼–½ tsp chili paste

  • 1 small garlic clove, finely grated

  • ¼ tsp kosher salt, plus more to taste

  • Fresh black pepper

  • ⅓ cup extra virgin olive oil

  • Zest of ½ lime or orange

Directions

  1. In a jar, whisk kombucha, lime juice, rice vinegar, honey, Dijon, chili paste, garlic, salt, and pepper until smooth.

  2. Slowly stream in the oil while whisking until lightly emulsified. Alternatively, shake everything in a lidded jar.

  3. Taste and adjust: add more honey for roundness, more lime for brightness, more chili for heat, or more salt to enhance the mango flavor.
